Sodium citrate is the sodium salt of citric acid (e330). The latter is a natural acid present in most fruits. It is an emulsifier, a stabilizer but also an acidity regulator commonly used in soft drinks such as sodas. Large jar / bottle / pharmacy bottle of the xlxth century in blown glass, thick, blue, closed by a painted sheet metal lid of color "faux-bois marbré". Label in paris porcelain (with fine gold borders) glued to gum arabic with inscription "citrate de soude", neck diameter 4 cm, base diameter 8.5 cm, height 19.5 cm. The mark of the pontil and the presence of bubbles attest to its age. In its juice, in perfect condition.
